Title: Changing the Conversation: Culinary Techniques to Meet the Needs of a Client’s Diagnosis Without Sacrificing Flavor for Diabetes & Heart Disease
Description: Change the conversation when discussing dietary protocol with clients. Instead of educating them on what they need to limit or “can’t have” per diagnosis protocol, empower them with foods they CAN eat and healthy cooking techniques that can be utilized at home to prepare flavorful food. Bridge the gap of nutrition education with what clients understand about food.
Learn how to educate your clients with evidence-based science, but translated through food along with behavior change techniques. Learn how to evaluate clients’ cooking skills and confidence in the kitchen to set realistic food-focused behavior change goals.

Title: Choline: Exploring the Growing Science on its Benefits for Mom, During Fetal Development and Beyond
Description: Choline is a nutrient powerhouse; yet, 90% of Americans are not meeting daily minimum needs (based on Adequate Intake data), and many nutrition professionals are unaware of its health benefits. This under consumed, essential nutrient is important for all ages and stages of life. It is especially important during pregnancy for both mom and developing baby, as it supports healthy brain growth and reduces risks for neural tube defects.

Title: A Tale of Two Proteins: Plant vs. Animal for Fitness
Description: There are different types of carbs, different types of fat, but not many people talk about how the different types of protein vary. There’s been a lot of recent attention around plant-based proteins, but how do they differ from animal-based proteins and how do they impact health and physical performance? With the protein trend still going strong, it is likely that consumers and athletes will seek a deeper understanding of protein, beyond just how much they should eat. This session will examine amino acids, explain how protein quality is determined, and look at differences in plant and animal proteins, including common misperceptions. It will also provide practical recommendations for meeting clients’ dietary protein needs through food.

Title: Nutritional Myths and Practices of the Elite Athlete: Implications for Active, Non-Elite Performance
Description: Competitive athletes have come to understand the benefits of good nutrition to athletic performance. With the dramatic growth in the number of Sports RDs, and the increased number of teams in both the collegiate and professional ranks employing nutrition professionals, today’s athlete is much more versed on the importance of diet to success on the field than were athletes of a generation ago. This is not to say, however, that athletes don’t or can’t fall prey to exotic claims for nutritional products, diets, and supplements that promise enhanced performance, improved physique, or other physical benefits. Through scientific data and anecdotal information culled from real life examples of elite athletes’ dietary practices, this session will provide information on diets, foods, and supplements that have been proven to enhance physical performance, as well as nutritional practices of dubious efficacy. Information on how the non-elite, physically active person can use diet to their advantage will also be discussed.
